2. Prepare of minced garlic.
3. Prepare of fresh chopped oregano.

1. Preheat the oven to 220°C ..
2. Peel and wash the potatoes then cut them into small chunks ..
3. In a large bowl , place the potatoes chunks followed by the minced garlic , chili powder , smoked paprika , curry powder , salt and cracked black pepper and mix around to coat all then add enough olive oil to coat all the potatoes chunks well ..
4. Next add the chopped fresh oregano , basil , chives and parsley , to the potato mix and stir to well to coat all thoroughly ..
5. Pour the prepared potato mixture into a baking dish and spread the potatoes all over the bottom of your baking dish , making sure all the oil goes into the baking dish also . Then place in the Preheated oven for about 30-35 minutes , or lightly golden on the bottoms of the potatoes , then turn them over in the baking dish ( shake the baking dish to loosen the potatoes to turn them ) now turn oven down to 200°C and proceed to cook the potatoes for a further 25-35 minutes , or until potatoes are cooked through and lightly golden and crisp on the outside ..
